I installed Galaxy 2.0 but I noticed not all of my installed GOG games were showing up as I have games installed on drive C and on my external drive E so I added E as a directory and ever since my client has been frozen and is unable to process the new games. Its trying to update them but they're all just listed as queued. I've restarted the client and even my computer but its still not working. Any suggestions? I'd also like to note it has no problems launching games from other clients off of drive E.

I am not sure the developers look into this forum that often - maybe its a good idea to report your error in gogs bugtracker ? Do this either via mantis2.gog.com or via Galaxy directly by clicking on the cog icon in the top left corner and then on "Report issue"

You should report this via mantis.gog.com (this is the bug tracker for galaxy), make sure to select 2.0 as the version you're using.
