If you bought the GOG BG2 classic (complete), and have the original NON EE Windows files of the game, it installs fine with the latest Wineskin version on OSX Monterey (2021 M1 max)!

Downloaded the winery, install engine WS11WineCX64bit , made a wrapper and installed.
Why? Because it looks so much better than the EE edition. And thats the point of GOG, playing the originals.

One bug I am trying to figure out. All the movies play extremely slowly, like 1 FPS slow.

Can I use it with a (conservatively) modded BG1 classic? Widescreen mod seems like a possible problem. BTW, what WineTweaks did you use? What wrapper config? I'm on Sonoma BTW.

Edit: I managed to run the classic BG1 through WineSkin but it hangs after the intro movie which is, like you said, about 1 FPS fast. I click to skip it and the game just hangs.

I use Wineskin server with M1.
Using Wine WS11WineCX21.2 engine (and tested the new CX23.7.1 cnc-ddraw 6.6. 0.0 engine which also works)
I can currently play the following classic non-EE non-modern version of these games:

Baldur's Gate 1
Baldur's Gate 2
Fallout 2
Arcanum
Icewind Dale 1
Icewind Dale 2
Planescape Torment

After installing patches/mods I always have the Widescreen MOD set at 1280 x 800 (for Infinity engine games). Games resolution is also set at 1280 in the .ini file. For Fallout 2 use the RPU Restoration Project and for Arcanum the UAP.
You can play full screen with a separate monitor but you need to have a virtual 16:10 screen. I use this amazing app called BetterDisplay. It can force your mac to go 4:3, 16:10 etc....to make these games run on your monitor with zero issues.

Picture bellow is Baldur's Gate 1 classic running on my 34 inch widescreen at 16:10 (Macpro 16 inch) aspect ratio. On my 16inch it fills the whole screen and looks amazing (I prefer gaming close to the original aspect ratio and I think 16:10 is just perfect giving you just a bit more map space).
Uses Widescreen mod followed by the TWM_GUI_beta0.994 mod (for the UI). You can get both there:
