I have a question, should I keep the Original BG and mod it or pick the new one?
I know EE exist long enough but I stopped buying games on Steam so I haven't check it yet.
I'm finishing planescape and I want to put my hands on BG, next. What version is more recommended?
You didn't even bother to check the forum, there are many topics covering this, one of them is just few topics down.

To answer your question - whichever you prefer. Big help, I know, but let me explain. I own both versions and generally use BGT for the original games.

There are pros and cons for each setup, but it boils down to asking yourself "Do I want to play Baldur's Gate in its original engine or the Baldur's Gate II engine; or do I want to play both games in the enhanced engine?"

One thing you can do with the originals that you can't do with the enhanced editions is link both games together in one epic adventure. In the originals, this is achieved with the Baldur's Gate Trilogy (named for BG 1 + Expansion, BG 2 and the BG2 expansion). This allows you to play through both games as one game, carrying over not only your main character, but the NPCs in your party as well (if they are available in BG 2).

Enhanced Edition (I find) is a little easier to play overall and the ability to zoom in on the party is nice. Also the quick loot bar helps alleviate pixel hunting for dropped items on the ground. Plus it's "install and go" rather than "install and mod, then go." So, whichever is easier for you.

Some will argue that you should play the "vanilla" version (unmodded) before modding. Which certainly has its advantages as it's back to "install and go" since the GOG copies are already patched and pretty stable on modern systems. Unless you have a graphics chip that hates dropping to 640 x 480 (BG 1) or 800 x 600 (BG 2 default), then you may want to install the widescreen mod and/or a bigger fonts mod. Or just go with the EE as the UI does scale fairly well.

I'm probably one of the few people that would admit this, but I prefer the EE versions to the originals (not that it stopped me from getting multiple copies of the originals, heh). I do hope they continue with making the EEs as I think both Icewind Dale II and Planescape would be rather interesting in the enhanced engine.

As for taking time, amen! I'm still on my playthrough of BG1 that I started a couple months back. I've arrived in Baldur's Gate in Chapter Five and am currently investigating the Merchant's Guild. I haven't played in a couple of weeks though due to a large influx of new stuff from the Fall Sale and the Nordic In-N-Out sale. But, I have a few days off for the holidays and only a couple more games in the pile to make sure work then it's back to the Gate, heh.
