I too hope it is coming back. And I think the front page is a mess. I can't even find the Daily Deal anymore.
So we're back to libraries and wishlists having a different UI from catalogue pages. Library and wishlist pages can still be browsed in list view. Let's hope they don't get reunified with the reduced functionality.
I only found about it today, also really can't understand this move by GOG. It seems so absurd and so so so unnecessary. But maybe sometimes you just have to reduce functionality, so later you have some solid grounds for a big and loud comeback with an improved functionality?
Out of curiosity, why do you want to be able to browse the store as a list rather than a grid? What advantage, to you, does having the store as a list rather than a grid have? (Alternatively, what disadvantages does the grid format have for you?)

Speaking for myself, the list format (as presented in the current sales) is a bit easier to read quickly, and you get a bit more info off to the right when hovering over the game icon. The grid items just expand about 5-10% and give a little thumbnail or autoplay video, not telling you much at the scale.

And for slow connections like mine, the smaller game icons load faster. Not having the autoplay stuff also helps deal with the slow speed.
Moving your eyeballs in both directions, vertically and horizontally is quite unpleasant.
The good old list view should be default, then you could keep your eyes motionless, and you can scroll only your mouse wheel.
If the decision of removal that view is forced by publishers, then I don't get it.
In grid view you can easier don't notice a title which you care about.

But fortunately there are exist third party sites, which still show games from gog (and other sites) in list view, and even they have wonderful filter options by price and discount percents :)

Yeah, people have been complaining about this for a while now. I have no idea why they removed it, and I wish they'd put it back.
