I have a 1280x1024 monitor and my desktop resolution is set to 1280x1024 too
but when i start the game on these exact resolutions it is not WIDE enough to see everything
any help would be appreciated. Thnx

Ok so im just trying to understand this. Do you set it, click apply and then accept. But when you restart the game it is stretched

I tried that with no help i also messed with desktop scaling and so on with no luck so far.

That is odd. I bet it is something silly we haven't thought of.
The only thing I can think of is your aspect ratio is off or you need to manually adjust your monitor.
