I find Notepad++ to be suited for the purpose of viewing/editing text, sometimes even scripting, and I'm sure many others will agree with me.

Nah, I feel this is a TL TL situation.
I second Notepad++, been using it for years...

My coworkers love Sublime, might also be worth a look.

Does notepad++ have a plugin for dosbox files so you don't need to remember all the commands.
While I'm writing this is there any way to refresh the cfg changes while dosbox is running, for example changing the graphics modes to see the difference without having to close and start it each time?

Probably not, since the Dosbox config is set. You could probably save a reference file and clone that, or use one of many DOSbox launchers to save you the trouble.

And no, many DOS games do not enjoy having switches toggled suddenly.
