It all started a few days ago. All of a sudden I was getting prices in USD, and even sometimes in Yens, back to Euros, then again USD. Now it looks like I'm sticked to USD for good... In my account's regional parameters I have everything set correctly, country : France and currency : Euros, but it all still displays in $. Only USD is available at the bottom of the page.

I already cleared all my browser's cookies and site data twice, while it may have had an effect it lasted for a very short time only, then back to $. FWIW, I use Firefox, but everything was going pretty well until recently.

What shall I do ?

If you put something in your cart, and then goto checkout, does it fix it? I have this all the time, and that fixed it last time. Didn't need to buy anything, just going to checkout seemed to update it.
Unfortunately GOG are more interested in pushing regional pricing than fixing things.
It works indeed ! So when it comes to the serious thing (adding to cart), it works again.

I'm going to mark your reply as a solution if nothing better such as a definitive solution comes out of this, since according to what you said it's only temporary...

It's a known bug on the site atm. GOG is working to fix it. nightcraw1er.488 should be marked the answer.

Everyone encountering it should file a complaint to GOG's support. They need thousands of complaints to prioritise it high enough.
I have the problem while using GoG in Chrome
