But that's a moot point, because without Crossplay, then co-op on the GOG version is not a viable feature.

If it is one of the best co-op games ever, then that's all the more reason why it absolutely needs the GOG version to have Crossplay with Steam, so that co-op will actually be playable on the GOG version.

So why do they keep not adding Crossplay?

and have no GoG friends
It's not meant for Internet/remote co-op. It's meant for same-screen couch co-op.
