Hello! I am interested in purchasing a few games from GOG here.

I know if I download the game installer, it is an .exe file.
When installing, does it automatically install any other things like DirectX or VC++?
Or do they get put inside the game's folder and only run when the game is first started?

I do not like games automatically installing updates like that.
With Steam, after I download the game, I go inside the game's folder to find any "redist" folders and move them out, to prevent them from launching when the game is started.

Can I do the same with GOG's games?

The offline installers have everything additional the game in question needs to run included and will install them once the installation process for the game itself completes. It may skip installation of dependencies you already have installed anyway, but I'm not 100% sure about that.

What you can do afterwards is to uninstall the dependencies (.NET, VC++ redistributables and whatnot) themselves again, but in doing so you would then effectively render the game unplayable, obviously.

You can just press cancel when a dependency installation screen pops up.
