I'm looking for a modern game that is like dungeon hack where you get to set the parameters of a randomly generated dungeon like size, monster type etc and then play through it kind of like Dungeonhack. Are there any modern games like that?

Well, of the specifications, no. I was going to suggest ChunSoft's Mystery Dungeon series, but you don't get to set squat in those.
