Is there a list of "Souls-like" (games that are similar to Dark Souls) on GOG? The only games I know about are Hellpoint and the Surge series.
These are good for a start.

Lords of the Fallen
The Surge
The Surge 2
Ashen

That Ashen game looks interesting! What is it like?
In what aspect?
Learning boss moves, dying freaking easily, the atmosphere, or all of the above.

I would say for learning boss moves...
-Hollow Knight
-Xanadu Next

yea that's all i got right now
Mortal Shell is coming out and that's Soul like

Decay of Logos - but it's not that great
That's good news!

Also, have you ever tried that Ashen game?
Hellpoint

what is good in these kind of games?

I should also mention that there is an official add-on that adds music by Rotting Christ to the game \m/

Unfortunately I'm not into this type of games so I cannot recommend any (although I tried Hollow Knight and it was a painful experience so I just quit).
Consider also 'Ghost of a Tale', it doesn't look the part but I saw gameplay of it a while back and to me it seemed to capture the Souls essence pretty well.

And, as other users have already commented, give Hollow Knight a try, in my opinion it has it all to be considered one of the best souls-like ever made.

simply not bugging out and having enemy variety and not delay in attacks.

Ghost of a Tale doesn't got combat.

Blade of Darkness, Gothic (to an extent), and Elderborn (has a similar atmosphere).
