I think Kerbal Space Program is the best suggestion you've had. Not only gameplay-wise, but value-wise too. Just be careful who you trade with; in any case, if I were you, I wouldn't go first in today's GOG.
How about contraption maker and universe sandbox ? Both have drm-free builds.
Civilization 3 or 4 should be fast enough, though they are not available on GOG. Also Company of Heroes (the first one) would cover a number of WW2 battles. Same goes for the Codename Panzers series (available here) or Panzer General 2. Extra bonus: kids can get an idea about the weaponry used.

Civilization 5 gets as a random event the birth of a scientist, general, artist, but those take time, unfortunately. The Total War series also offer some insight in certain historical periods (i got interested in the japanese history by playing the original Shogun). As more spectacular games regarding japanese/chinese historical figures Dynasty Warriors/Samurai Warriors/Warriors Orochii would introduce you to various characters (some real, some legendary) from the history of Japan and China.

If you can make them work on a modern system, Carmen Sandiego series would cover geography and history.

But that's still in early access.
Unfortunately, i am not big on buying games in Early Access, so i can't say. It certainly looks interesting. But there is the lighter version of this: Stronghold and Stronghold Crusader (the original games).
Railroad Tycoon series give a good amount of true facts about, well, railroads, trains, tycoons, USA formation, relations between UK and India and others.
Tropico is a goofy way to discuss Cold War and political regimes in Latin America.
There are the American Conquest and Cossacks games about conflicts invaders (settlers) and natives in the first and the independent slavic groups in the second.
Papers, Please could be one too (all the ones that I mentioned are heavy political-biased games).
They are not educational per si, but can be used to invoke interest in the theme

Waking Mars is an outstanding game about spacial exploration, botanics, alien life and so on, worthy a look

PS.: And for you I recommend No Pineapple Left Behind :p
