Telika: Speaking of Delphine, I'm pretty sure the pointing and clicking GOGers would love Future Wars and Operation Stealth.
And Cruise For a Corpse

I'll eventually post my list of p&c not yet on GOG, at least the pre 2010 ones.
There are many.

BadDecissions: Obviously, plenty of AAA games I'd love to see DRM-free, but in terms of old games I find it especially frustrating that GOG still doesn't have the first five Wizardry games. Sure, they're pretty rough to play (especially the ridiculous way character importing worked in 2), but they';re a major part of CRPG history, and they have other games in the series...
Wizardry 1-5 is what I thought of when seeing the topic. Not the Wizardry Archives version, though, where Wizardry 1-3 have a bug that makes stats drop more often at level up than they should.

At least we got Elminage Gothic.

rgnrk: And Cruise For a Corpse
Forgot Cruise for a Corpse was Delphine too. Damn these guys were good. Cruise for a Corpse would be a hit on GOG, if only amongst the forum mafia players.

So would the Colonel's Bequest, on Sierra's side. Never understood why that one still sleeps tight in the basement the basement.

For me it's Conquest Of The Longbow; one of the Sierra games I'm specially fond of and it's not here.
But yes, both Laura Bow games, both Conquest games and Freddy Pharkas are a pretty big gap in the Sierra catalog. And we can also add the Ecoquests there for good measure too.
1) Legacy of Kain 1
2) Cybermage
3) The Reap
4) Sub Culture
5) Diablo 1 + Hellfire
6) Diablo 2 + LOD
7) Warcraft 2 + Expansion
8) Grand Theft Auto 1 + London expansions
9) Grand Theft Auto 2
10) Grand Theft Auto The Trilogy (3, Vice City, San Andreas)
11) Command And Conquer The First Decade OR Ultimate Collection
12) Plants VS Zombies
13) Namco Bandai Titles
14) Fear 3
15) Oddworld Munchee's Odyssey
16) Batman Arkham Asylum + City GOTY
17) Titan Quest + Immortal Throne
18) The Suffering 1 Prison is Hell
19) The Suffering 2 Ties that Bind
20) Musou (warriors) Orochi Z the Collective (pc, japanese)

I am NOT getting those on Steam, even if they offered them at 4 bucks each. It's GOG or NOTHING, baby! Besides, for most of them, i own the old retail box anyway; getting them anywhere else other than gog, is stupid and pointless, only GOG will see to it that they are tweaked and optimized, to run properly on modern systems and all. For example, C&C collection is a crappy mess, on origin. Do people there even test if their shit runs on systems other that XP, or older? And no, DRM sucks DONKEY'S ASS, so it can be anal-ised!

Blood Omen: Legacy of Kain and The Operative: No One Lives Forever. :(

I'm also a bit curious about games like The Wheel of Time, Archangel, Drakan: Order of the Flame, Heavy Metal F.A.K.K. 2, maybe KISS: The Psycho Circus, but I don't know if they would still be fun for a first time player now or if they didn't age well. Heretic and Hexen should be here, too. And Max Payne, provided it works and is giftable across regions. ;)

The Sims 2 would be pretty nice.
There's a tonne of old racing games I'd love to get on GOG:

Geoff Crammond's Grand Prix 4 ---- F1 2000-2002 ---- Superbike 2000- 2001
GT Legends --- MotoGP 1-3 --- Total Immersion Racing --- SBK-08 --- Rally Championship Xtreme
Harley Davidson Motorcycles Race to The Rally --- Super Bikes Riding Challenge --- Sega Rally 2
Nascar 2002 --- Off Road Drive --- OutRun 2006: Coast 2 Coast --- Grand Prix 3 --- Michelin Rally Master
Paris Dakar Rally --- Castrol Honda Superbike 2000 --- Swedish Touring Car Championship 2 --- F1 Challenge '99-02

I have some of them on the PS2 but I would prefer a PC version.

These adventure games would be cool to see on GOG:
* Full Throttle * Discworld * Lighthouse: The Dark Being * Amber: journey's beyond * Blade Runner
* The Neverhood * Blackstone Chronicle * Heroine's Quest: The Herald of Ragnarok * Scratches
* Cruise for a Corpse

And there's Cruise for the Corpse, it's also an interesting game.

I can only say good things about DSI. Thing is, I would assume licenses for Prince of Persia and Flashback are Ubisofts now.

EDIT:
Just saw Cruise for a Corpse was mentioned in follow-up comments too.. twice. Yay.

REEDIT:
Thrice actually. Yaay.

Grand Prix Legends
The last Papyrus NASCAR game (2003 was it?)
SIMBIN racers like GT Legends and GTR.

And more of the old SSI catalogue especially: Necrodome, Soldiers at War, Great Naval Battles, Silent Hunter, Su 27 Flanker 2.5.

The Rowan Interactive flight sims: Flying Core Gold and Mig Alley.

Earlier Microsoft stuff, like Close Combat and Age of Empires, Midtown/Motocross/MonsterTruck Madness games.

Those are the main ones

neurasthenya: All of them.
This :D

But for starters I'd take Skyrim & Saints Row 4
Submarine Titans
Fury of the Furries
Myth: The Fallen Lords
Myth II: Soulblighter
Myth III: The Wolf Age
Lion
Wolf
Bermuda Syndrome

I guess that's the list of my most wanted games. I didn't include Dune series as there is little chance to see them here...
The other Dragon Age games,
the Mass Effect series,
Saboteur (already confirmed now all we have to do is wait),
Mercenaries 2,
Saints Row 4,
Alice: Madness Returns,
The Legend of Korra,
Dishonored,
ReVolution

The thing is, to me, it doesn't matter. For me it's not about playing the game to enjoy it with todays sensitivities, and more to preserve the game as it was made. So basically, I don't play most of the games that I buy.
(For instance, most Hitchcock movies haven't aged well at all. They will always be historically relevant, though. But it's not only about movies that important. Luckily most movies are preserved, so I have access to the ones I'm attached to, regardless of their objective quality. I wish that was the case with games too).
The first ones that come to mind:

Max Payne
Emperor:Battle for Dune
Star Wars Episode 1 Racer
Mafia 1
Heavy Gear 2
Mechwarrior 3

and above all: Hardwar
