I'm going to assume "no" - at least not day 1 - since it seems like a relatively big-budget game. (dev or publisher may be scared of DRM-free or apathetic about GOG because of GOG's small marketshare/small income likely to be made here). But we'll see.
Since not even the publisher has announced specific PC platforms, nobody can answer you with 100% certainty.

I'd personally lean on no, because the game seems to be heavily multiplayer (if not multiplayer-only), something that GOG is not well-known for.

Does have a decent single player part to it at all? As if no single player part to it then I doubt it

I doubt it, when they say PC they mean steam or epic. Also it seems to be a multiplayer only game which doesn’t fit the drm free criteria. Shame as I watched the Netflix series and really liked them (and of course I have all the films from back when they were released), so would have been interested.
It is a PVP game, it will probably use Epic or Steam online services for multiplayer, so no it won't come to GOG.
Gog could bring Evil Dead Regeneration instead.
As others have said this is a MP heavy game meaning it will use servers which many see as a form of DRM so not likely coming here, and if it did there would be a huge backlash if a client or online connection is required.

Better chances of getting Evil Dead: Hail to the King or Evil Dead: Regeneration here.
