According to PC gaming wiki the first one should still be DRM free. The second one is probably "Below Zero" which is surely not DRM free and the third title (Subnautica 2) is not released yet.
It is possible that any of the vendors, except GOG, may add a DRM even if they at some point sold a DRM free version. So it is important to pick any DRM free version there "on time", else it may be gone forever, at some point. This also means that in many cases a good pricing is not possible but at least those getting it at a high price was showing their true support, which is important.

The head developer, Charlie Cleveland, is oblivious or delusional about how piracy, DRM and basic economics works. Might be true but he does not need to understand "economics" as long as he is creating a good game and he got several million buyers, in this case around 5-10 million. The coins comes by itself... no matter DRMed... non DRMed... or even pirated in between or after that.
I suggest, the incapability or lack of will for a GOG version is a mix between "fear of DRM free" and "not really worth it" taken all the factors into account = more work for them and even "the fear" included. It is kinda a mix of several factors.
Personally i do not really understand all the hype which made this "indie game" into the "mainstream-smash-hit" it became today but i do not need to understand it... not every game is for me, but it might be "the game" for GOG as well.
Of course there are releases from Indie devs, who made them over 100 million coins in profit, who has been released on GOG. The whole matter is different for every publisher, even Indie devs.
