Since I never had a Gameboy growing up, I'm really excited about the new Pokemon remakes coming out this week. I know I'm only getting one, but I don't really know which.

I tried researching online and all I found was old posts saying Emerald is better than both, or saying one legendary has better movesets than the other, which for someone like me who is more interested in collecting than battling is not very useful.

I know this forum is more about PC games, but I always liked the community and felt like it would perhaps be more neutral than other places.

So, which is better? Pokemon Ruby or Sapphire?

P.S.: Since the game has a lot of water, I'm leaning a bit towards Ruby so I won't fight that many water types, but I'm not sure if it's that big of a deal.
Emerald is supposed to be better than both.

Sure, but unfortunately it's not among the 3DS remakes coming out.
Eh, does it really matter? Do you intend to collect them all? Besides, with internet acess you can trade your pokemons more easily than when those games were actually released.

Part of me wants to play those new pokemons since i must have wasted +200 hours on the old gb/gba pokemons but since i've played that pokemon black/white for 15m that i've lost all the interest on the franchise...
I haven't played Ruby or Sapphire or any of the "modern" ones but I spent an insane amount of time (more than in any other handheld game combined haha) in Pokemon Crystal and I would have zero problems recommending it. I have zero idea if it's among the remakes or not though.
Major differences between Ruby and Sapphire (from what I remember) are what exclusive Pokemon you can find in the wild as well as which legendary you run into later. As far as which one is better I remember liking the ones in Ruby better, but it really just boils down to personal preference and what you want out of your Pokemon.

Emerald is more of a "Ultimate Edition" when it comes to the stuff they've added (gym leaders having different teams, new areas, more double battles, battle tents, etc.). I only played portions of that so I really can't say much.

Regarding the remakes...I'm not sure. Just looking up info the major changes I'm seeing are more mega evolutions, something for the two legendary Pokemon (Primal Reversions), and a slight edit to the original plot.

So I have played the original Ruby, Sapphire and Emerald and the remakes of Red and Blue, FireRed and LeafGreen. But those were the last Pokemon games I really played and now, I have somewhat lost track of the franchise therefore I can not say something about the new game mechanics.
Regarding a recommendation: it's a Pokemon game, so expect the same story told in slightly different ways. Besides that, the two editions are very , very similar.
Although Emerald was best, out of the remaining two games, my personal preference is Sapphire. :)
I was partial to sapphire on the gba. Never had emerald. Get whichever! Easy enough to trade for pokes now.
I prefer Ruby, as Zangoose is among my favorites in the 3rd gen...everyone seemed to have one in their Netbattle team when the games first launched, lol.
My daughter wants Omega Ruby because she prefers its legendary. That, and whether you want to fight more water or magma battles, seem to be the only significant differences as far as I know.
Neither is really better since I'm pretty sure the only difference is that each have some exclusive Pokemon to collect. The only way to get them all is by trading if you know someone with the opposite version or buy both.
Back in the GBA era, I had sapphire, so that would be my preference. Either one is good though, as the differences are minor.
If you're going to play wifi battles based on the meta, I'd really advise getting the one with Groudon since Mega Swampert's swift swim+primal groudon's or nomral groudon's rain=kills everything.
