If not can anyone name the games that aren't?
Each game has its compatibility listed on its catalogue page. The only one I can recall that isn't listed as Windows 7 compatible is Cannon Fodder but there may be others.
If the game lists Vista, it most likely works on 7. Keep in mind tho, every computer is different. Results could vary.

The only game with major issues for a large majority of people, that comes to mind right now is I'76.

As far as I know, lots of the older releases are not listed as Windows 7 compatible. That doesn't mean they don't work on Windows 7 however, just that GOG hasn't gotten around to testing them on Win7 officially.

Basically, your best bet is to check the subforum for the game you're interested in (if it isn't listed as Win7-compatible), and see if anyone else has reported problems running it under Win7.
Go to the specific game forums of those you're interested and search for windows 7, it should give threads about previous users experience with that game. In case the search function doesn't work (it doesn't sometimes) you go to google and search like this: Windows 7 site:www.gog.com

You could also check out the gogwiki.

I wonder if anyone here has made a list of games confirmed to work, when I'm thinking about it's actually a good idea. Sort of a cross check list of how well games have performed one what kind of systems.

Sort of like a community contributed checklist of games that work on certain systems?

Yes, that way new users could easily check if the game they're interested in will work depending on what kind of system they have and how much tweaking they're going to accept.

Is there something like that already on the GOGwiki?

I haven't a clue as to who manages that, and/or who can and can't contribute.

Anyone with a GOGwiki account can contribute. What have you contributed to the GOGWiki today fellow gogger?
Cannon Fodder works under Windows 7. It runs without problems on my Win7 64x laptop. So does Jagged Alliance (although I needed to replace the DosBox program with a newer version).

From what I could gather, the Tex Murphy games seem to work fine too (only Mean Streets and the second game are listed as Windows 7 compatible) except Overseer, which is a Windows game, unlike it's predecessors. Maybe I should get them some time.
