Hi All.

I'm looking for a new medieval/fantasy rpg to play. I have just finished both The Witcher 1 & 2 and now I'm bored...

Any suggestions would be greatly appreciated.

Ultima, Might and Magic, Gothic, Neverwinter Nights, Baldur's Gate, Icewind Dale.

Although it's not your traditional story driven RPG. It's more... accomplishment driven.

Have a crack at Two Worlds. Opinion is divided on it, if you're looking for something really serious then avoid. However if you want something that's pretty good, doesn't take its dialogue to seriously, and is definitely a bit different, it's worth a try.
Most of them? Dragon Age: Origins is my go-to recommendation (and probably the most similar in tone to Witcher), unless you mean "recommend a game you can buy on GOG," in which case I'm not sure. Maybe Gothic, if you can get past the controls. And like wpegg, I enjoyed Two Worlds, but be aware that it's completely ridiculous.

Combat, however, is depressingly bad from my experience (admittedly, I didn't go deep into it).
