Sacrifice in gameplay...besides what has been mentioned, in God of War some puzzles require you to do human sacrifices to move on to the next area. They're caged and unwilling, but conveniently available as they happen to be the key required to open the doors.

I don't know if anyone already mention this but Soul Sacrifice for PS Vita is, well, all about sacrifice. The basic one will make you sacrifice a stone, wood, drops of blood, a finger, a hand.... up to your own life to create spells to defeat cursed enemies. One of the most deadly and fatal spell is to pull your own spine out and turn them to a friggin giant sword made from skeleton. Of course after the effect of that spell ended you drop dead.

Oh and your enemies? you can give em mercy by helping their souls to be purified OR you can get more power from them by... what else? sacrificing their souls of course!

It´s more like the original Brutal Legend.
Easy description: 3rd-Person-Strategy done right: Non-Linear-Campaign, Visually fascinating world, bombastic magic effects cast by your wizard, epic battles around important points on the map.
Oh, and you have to decide to bring MASS units to combat or some strong units.
Sacrifice allows good tactics with both attitudes!

Sachys: Medival Total War 2 - guaranteed if you're having a large battle, you'll be sacrificing some units - and that's exactly what the peasants and serfs are for. I once sent an army of some 5000+ peasants against the Mongols in the hope of delaying them long enough for my crusading reinforcements to arrive.
It didnt... but the bludgeoning hell was pretty intense. My army routed with less than 100 souls left alive.
Awww...Peasants are too dangerous for the morale of the whole army! They're easily killed in many ways. They wear no armor whatsoever. Mongols are mostly archers and cavalry. Either arrows and repeated cavalry charge will easily eat peasants like snack! If the Mongols stupid enough to use melee, peasants would be put to flight anyway.
To use peasants as arrow fodders for the Mongol archers, they would be a nice target practice to increase the archers' kill count, thus their experience.

My suggestion is use massed spearmen instead. Spearmen are usually cheap and easily available. They have shield so that the Mongols archery strike would be a waste. Spearmen's weapon would be a perfect weapon to kill Mongol cavalry. Surround them with your wide line of spearmen. Move while keeping your formation intact, corner them and finish them!

In Magic: The Gathering games you can sacrifice some creatures so they will boost another creature.
In Planescape Torment you have to sacrifice several body parts to learn fire-based spells, and depending on your decisions, may have to sacrifice some hit-points (or an NPC on the run) to get a party-member back.

Actually, spearmen tend to get shredded by mongol mounted archers. What actually happened was about two turns later, the mongols had to deal with a rather massive crusading army of experienced cavalry, crossbows and heavy infantry. now THAT worked a treat!

In our BloodBowl league (!) I played the current season with vampire team - throwing the thralls to harms way is one of my main strategies. Sacrificing few thralls to tie down the opponents team + score TD is easily worth the price no matter the shape they end up in. ...might be also the reason they arent levelup one bit. :)
