Sleeping Dogs is an absolutely gorgeous game, probably the best looking open world game, in my opinion.
tinyE: I might get some shit for this, I almost posted it last night and kept stopping myself, but I'm going to have to throw out the Tomb Raider games. Not one single entry in the series but bits and pieces from all of them brought together representing the whole series. The opening temple in #4 with the shadows and reflections, the Stealth Fighter fly-bys in #3, and countless vista shots throughout all the games like when you find yourself on top of the Sphinx and the camera pulls back. Call me a simpleton but I never cease to be blown away by that stuff. Semi-related: A lot of Playstation one games have aged wonderfully, although their overall graphics quality might look more than a little rough nowadays. Bushido Blade is one Playstation one game that still looks great to this day (despite the art direction being all over the place), Skullmonkeys is another.

World of Warcraft. That was what made me fall in love with the game in the first place, the art style. I know that some people--even Blizzard employees---consider it goofy and outdated but I always felt it was one of the best aspects of the game. I still remember the original Night Elf starting area, it took my breath away. The old Darkshore with its long twisting paths through the forest. The golden glows of Elwynn Forest.

Guild Wars was probably the most beautiful game I ever saw on such a low system requirement.
These days, there's tons of amazing graphics. Skyrim and Battlefield 3 were pretty stellar, I thought.

No mention as to whether they have to be released or not yet, so I'm going to have to go with 2 unreleased games:
1) The Witcher 3
2) The Division
Only one of them will end up getting my money thanks it being DRM-free however. ;o)

Actually Race The Sun.
On screenshots and videos the graphics to don't seem like much but when you play the game it somehow all comes together. It's mesmerizing.
