I bought Neverwinter Night Enhanced edition here on Gog because I like to support GOG. But it seems like its not up to date with the last versions of NWN EE? How can I update to the latest patches?

It's up to date with the latest official and stable patch. Steam allows users to test more advanced but potentially unstable development builds, but they're not official patches.
