There isn't an ingame option for that.
Not exactly the same thing, but close enough: always set your active quest to the "Collect 'Em All" quest (the quest to collect all gwent cards). This quest doesn't have a quest marker. Tada.

But the game automatically switches to tracking whatever main quest gets an update in its objectives, which is really annoying.
