I have encountered those noonwraits and should slay them for the contracts but no matter what lvl I got they always heal faster than I can hurt them even using the oil. On every difficulty except for easy they take so little damage that at the next time they split they are full again. For the lvl 10 contract I went back with lvl 25 and still couldnt inflict enough damage on higher but easy difficulty cuz they split and fully healed.

Since I dont enjoy setting the difficulty back to low all the time I encounter them I wonder if anyone knows howto deal with them?

Use Yrden sign or Moon Dust bomb (the latter is better), they're pretty easy to kill with those effects on them. Also, when it summons three wraiths to heal, try to kill them as fast as you can (takes one hit each). I also noticed that if you stand exactly where one of those three should appear, they either won't appear, or you will have to kill only one of them for the noonwraith to reappear.

In most cases you can find all the information you need (recommended oils, bombs, signs) in the witcher's bestiary.
