Heroes of Might and Magic 2. I didn't even overly care for the game but the opera parts of the soundtrack sends shivers down my spine.
Morrowind and The Dig. Both are amazing scores. Sets the mood and keeps you locked in. Also, Monkey Island 2 and Simon The Sorcerer are really good in that same regard.

The Path of the Warrior: Art of Fighting 3's Arrange Soundtrack. Not only was the entire game a huge gamble (ditching standard combo systems for something similar to 3D games of the time), the arrange soundtrack ended up being a weird jazz / samba mix that is just AMAZING. The mix used in the NeoGeo CD version of the game (and consequently, the PS2 Anthology release) used cut up / looped versions that took out much of the music's awesomeness, but here's a few tracks from the soundtrack album versions.

Liberation Hallucination (Credits theme, missing a sound effect-only prologue and epilogue to the game's story.)

I have been trying to get a copy of this CD (or at least a FLAC rip) for quite a few years.
This makes a lot of people go WOW. ;)

I'm surprised the music for Star Control II rarely earns a mention in these kinds of threads. Some of the remixes done by the Precursors are really quite excellent and set the mood perfectly.

The music from Warhammer Chaos Gate is very WOW. :)

WH40K: Dawn of War 2
Diablo 2 had some WOW tracks too (the town music in Act V for example)
Also several tracks from World of Warcraft soundtrack were really epic.
