Morrowind and the Legend of Zelda Ocarina of Time are the two that made me WOW when I was young. Today I'd add Dragon Quest VIII to that list. It's simply phenomenal in my honest opinion.

I think that in cases like this, it's really important to be specific. Not only is the music different between different installments in a series, but the music for the exact same game can also vary enormously (even completely) between platforms.

Whiteblade999: Heroes of Might and Magic 2. I didn't even overly care for the game but the opera parts of the soundtrack sends shivers down my spine.
I love that soundtrack too. It also fits the game like a glove, which is also important in a soundtrack.

elbaz: I'm surprised the music for Star Control II rarely earns a mention in these kinds of threads.
True. There are some fantastic tracks in Star Control 2.

Most of my own favourites are pretty old:
Monty On The Run (C64)
Wizball (C64)
The Last Ninja (C64)
Super Cars II (Amiga)
Cannon Fodder (Amiga) (and if you like that tune, you HAVE to see this)

There are probably many more that I've forgotten, also some from the PC, but these are some of the games for which I remember the music the most.
Anyone mentioned "Shadow of the Colossus"?
Theme from The Lost Patrol

Theme from Cannon Fodder

Red Baron 3D/II Menu Music

German music for Panzer Front, a great old WW2 tanks PSX game

Normandy spaceship music from Mass Effect

Vietcong Debriefing/camp Music

and lots more. :)

Most of what I'd consider great game music has been mentioned already, but I'll add:

Mechwarrior 2 (PC) - in 1995, a relatively unknown Jeehun Hwang created a fantastic blend of tribal and orchestral music. The suspense I felt when listening to this music, particularly when my mech computer would be saying "Enemy powerup - detected", always sent me into a cold sweat. Sample

Terranigma (SNES) - I thought this game was vastly under-appreciated at the time, probably due to the fact it never released in North America. It had one of the most stirring tracks of it's time. Sample 1 Sample 2

edit: woops, MW2 was 1995, not 1997. Makes me feel old...

The theme song to Halo is fantastic.

Good call. Forgot about Mech2. The music was just CD audio, and I used to just listen to it over and over all day. Now that I think about it, Im pretty sure I like its soundtrack more than Morrowind.
Morrowind ... ah just so beautiful.

And Little Big Adventure 2 (please can we have this on GOG? I love that game so much.)
Great call on the Freedom Fighters theme, Delixe. Totally forgotten that one.

Two words: [url=http://www.youtube.com/watch?v=4zRdeOHc8iQ]Empire Best soundtrack Bioware have ever done, followed by [url=http://www.youtube.com/watch?v=kTXGdztRpxg&feature=related]Effect

I love the [url=http://www.youtube.com/watch?v=rU1S5aVIRtY&feature=related]Odyssey soundtrack, if only because it reminds me of a misspent youth playing JRPG's. That, and it's a real kick ass soundtrack in its own right.
There is no better soundtrack than Heroes of Might and Magic 4 series (and this is my favourite HoMM game)

and there is nothing better than Water Theme

Pure beauty.
Magic & Mayhem
Resident Evil 5
Total Annihilation
Shadow of the Colossus
Heart of Darkness
Dawn of War 1
Dawn of War 2
Lost Odyssey
Ork
Splatterhouse
Toki: Going Ape Spit
Arcanum: http://www.youtube.com/watch?v=ftvpi-6Z6qw

Nuff sed!
