Thing is, right now, Mirror's Edge has a rather simplistic combat system, relatively easy to create. You click at the right time to disarm a dude, and then you can shoot other dudes with his weapon. Creating that? Not very costly. Where most of money and resources of Mirror's Edge went was parkour - so all the cool stuff like wall running, the way you manage your momentum which is a fairly unique mechanic to Mirror's Edge IIRC, jumping around poles, hanging from pipes etc. etc. - that was the most costly thing to make. And here's the issue with what you'd like in the game - if proper combat were to be implemented, like some sort of berserk mode, they would need to make proper meele combat with kicks and punches and everything, with corresponding animations etc. etc. - that costs money and time. Now that money and time has to be taken from elsewhere - so let's say, just for a quick example, all of the wallrunning would need to be removed to make that happen. And suddenly, Mirror's Edge has bad combat and bad freerunning.
Of course, for traps to funcion, AI would need to be adjusted, physics would need to be toyed with etc. etc., it would probably be even more difficult than proper meele and even then, since they have to focus on freerunning as well, they would probably not do either very well. As it stands, we have a very simple combat system, but freerunning mechanics which are better than in vast majority of videogames out there and I don't know how about you, but I appreciate they have focused on the unique.
Now that being said, I'm really curious as to how is the new Dead Island game going to turn out - if you're unaware, it's basically exactly what you want. Presumably it's going to take the meele fights from previous Dead Island games and there, meele was very good, it's going to take freerunning from Mirror's Edge, and it's going to implement traps that you can lay during daytime so then you can use them during nighttime to escape. Pretty much what you're asking for + open world.
