I'm a big fan of Etrian Odyssey on the Nintendo DS. Yuzo Koshiro's wonderful soundtrack is what drew me to the game, but I stayed for the map-making. It's so simple yet satisfying. A couple nights ago, I bought a pad of graph paper on a whim. I'm looking to do it for real. My problem is I don't know which game should be my first. I've been debating on Might & Magic or Legend of Grimrock. Any other ideas?
Hi, i suggest you go with Legend of Grimrock. Modern feel for a dungeon crawl experience, what more to ask for? :)
World of Xeen (Might & Magic 4 & 5) or Ultima Underworld 2.
Legend of Grimrock, definitely.
Stonekeep

that thing has such huge atmosphere that it will really get you...

and it's here, on GOG, waiting for you!
How about Cardinal Quest? Pretty decent little indie dungeoncrawler.
I can definitely recommend Ultima Underworld 1+2. Those were my very first dungeon crawlers back in the 90s.

Legend of Grimrock is another one I can recommend if you are looking for a new game that pays homage to games like Eye of the Beholder or dungeon Master.

Arx Fatalis is also awesome, is set in a world completely underground and still looks good even to this day. Has a unique gesture-driven magic system where you draw the runes for the spells.

I would be remiss if I didn't give an honorable mention to Stonekeep which is an Interplay classic, also from the golden age of the 90s.

Hope that helps :D
Go get Legend of Grimrock before we all murder you.

Ultima Underworld. This is a must-play classic.
Thanks for all the suggestions, I'd heard of most of these except Stonekeep but it's nice to have them consolidated into a list of what people would suggest the most.

I've been trying to sort out how to go about the mapping and I've thought about some issues and solutions, but two things are still bugging me a little: should I start the map on the center or bottom of the page? And do I generally need more than one sheet of paper for any floor?
Enough was said already.

Ultima Underworld 1+2 and Legend of Grimrock.

You don't need to draw a map by yourself in these.

Arx Fatalis if you want a "morrowind" dungeon crawl.

Temple of Elemental Evil if you want a "fallout tactics" dungeon crawl.

Torchlight if you want a "diablo" dungeon crawl.

Depth of Peril, or Kivi's Underworld, if you want your "diablo" dungeon crawl to take place in a crazy frantic autonomous AI-driven universe with AI players trying to solve your quests and defeat the baddies before you.

Legend of Grimrock, I suppose, if you want a "dungeon master" dungeon crawl, but, you know what, as I haven't played grimrock yet, I'm very tempted to say more simply :

Eye of the Beholder if you want an "eye of the beholder" dungeon crawl.

Desktop Dungeons if you want a "minesweeper" dungeon crawl.

Fastcrawl if you want a short dungeon crawl.

Either way :

Dungeon Crawl Stone Soup, if you REALLY want a dungeon crawl.

Now now, I am sure the slugs will do that for us.
I, too, vote for Ultima Underworld. It's sexy.
