An open ended question, really.
I'd want it to be actually Sci-Fi. Not Space Opera or Fantasy in SPAAAACE. Failing that distinction is a pet peeve of mine.

A mix of Kotor with some Freelancer and dash of EVE.
The big one that I would want is the same I want in pretty much every RPG. Massive Open world. Preferably one that has enough stuff to do that I can just forget about the main plot. So basically I want Morrowind, but with a sci-fi setting. Also, It needs to have mechs. Mechs are the greatest thing ever, and I get sad every time I play a game that doesn't have them.

What do I want in a sci-fi RPG? Simple. KotOR 3.
A 'pure' RPG. I really enjoy the Mass Effect series, and I'd really like to see something like that but made in a true RPG style rather than a hybrid action RPG/shooter.

Essentially, space opera = soap opera in space. It is a sub-genre of sci-fi, but with sci-fi being little more than the setting that the traditional romance and intrigue of the soap opera takes place in.

Oh and completely gay love interest characters. Not ones that are open to either gender but one who only goes for their own gender.

Ah, OK. I was missing the "soap" bit and thought along the Wagnerian lines. Like - heroes, gods (or ultra-ancient and ultra-powerful beings), curses, prophecies, treasures (alien artifacts) being stolen/lost/found/used for evil purposes. Some romance, some interracial breeding, epic conflicts of space empires. Yeah, it does sound cheesy, but in a charming sorta way.

As opposed to soap opera-y "I'm your missing twin sister, who was adopted by an influential politician, while you had to grow up in a farm, and then I fell in love with you, because I never knew that we were related, and now we have to kill our father whom we never knew but who is our arch-nemesis".

Thats a hollywood space opra I guess, but Its hardly accurate when used to describe the genre as a whole.

Genres are very loose things. If it gets lumped in there, it counts essentially. It's mostly a "what does the public eye consider X?" This notion bothers me.

Sci-Fi was originally about the use of reason and technology to overcome. Whether that thing to be overcome is human nature, mother nature, space aliens, or whatnot. They at least try to be scientifically plausible where allowed. It's kind of developed from there to being that plus situations where the technology or reason itself has become the obstacle. Former is 3/4ths of the movie Sunshine. Latter is Moon and Frankenstein.

Space Opera is bigger than life people doing bigger than life things in space. Big damn heroes fighting big damn villains with spaceships. Though spaceships aren't always necessary. Dune is a good example of this. I hear that the Honor series of books and Foundation are, as well, but I have not read those.

Fantasy in space is when fantasy writers write space opera. Races of singular ideology that can be reasonably mapped as fantasy analogues of Orcs and Elves. With magic powers that people excuse because they think telepathy and telekinetics are more plausible than fireballs. There may or may not be an excuse to use swords. Star Wars and Mass Effect are the examples you are familiar with.
