Oooh, there are lot of good old games that need a remake. It just depends what the majority would say, but then again, they might miss out the real gems.
I liked DragonForce. Jagged Alliance was good after that....but I like Dragonforce better. Heck...while your at it give Jagged Alliance and upgrade and make an MMO out of it.
The adventure game Sanitarium hasn't been played by many people, and that's really depressing to me. It's one of the best games I've ever played, but I've never met anyone else who's played it. The deep psychological story could be reproduced well under a good developer(I'd love to see Akira Yamaoka work on it). We don't get enough good classic adventure games or psychological stories nowadays. ಡ_ಡ
Simon the Sorceror 3D
...or, while we're meddling with the past, why don't we just erase it from history?
Also, to the person who suggested a graphical update of the original Monkey Island games: why?! Were the zombie ghost pirates not 'realistic' enough for you?

JudasIscariot: System Shock 1 could use an engine remake. Keep the story as is in the original game, just give it a huge graphics update.

I'm with Judas.
Games don't need "modern remakes" - look at the monstrosity that is the Monkey Island Special Edition. They just need engine updates.
I'd like to see Broken Sword One redone with the updated engine in BS2, it offered better graphics, George's costume could change when appropriate...
Software is never finished. Developers should keep developing and updating.

I vote Zombie Ate My Neighbors. It was for the SNES and it was awesome. It was practically the reason I begged my parents for a SNES back in the day. A remake of that would be hard to pull off. It had really good humor about horror and sci-fi movies of the old days. I actually just played it again a few months ago and it has stood the test of time.

Monster Madness for the 360 comes close to being a remake if not a sequil
I'm voting for the original NES version of Teenage Mutant Ninja Turtles.
The slogan should read: "Pissing People Off Since 1989"
I would say:
Crusader: No Remorse
Crusader: No Regret
Moonstone
7th Guest
11th Hour

There are many more I could list, but I think I'll stop there just now.
Rollercoaster 2.
It was a great game. And a remake of it could be even better. But it must not be like RC3, that one was terrible.
Syndicate and Syndicate Wars!
There have been some excellent suggestions in this thread...Shadow Warrior and the I-War games for example. Here's my wishlist of games that could use a facelift similar to what Sid Meier's Pirates! got - leaving the gameplay as true to the original as possible:
-Wizball (the original C64 version - the Amiga conversion was horrible)
-Bozo's Night Out (Pub-crawling sim, a 3d version with a good physics engine required. No straight-edge programmers allowed!)
-Raid on Bungeling Bay
-Seven Cities of Gold
-Autoduel (was way too heavy for 8-bit machines, great idea for a game)
-Master of Orion
-Master of Magic (fix the braindead AI and bugs)
Thief 1 and 2
Xardon
Dust: tale of the wired west
Sim copter
Streets of sim city
Dugeon master
Sim theme park
Shenmue
Strike series

Sanitarium doesn't need a remake, it just needs availability. There are plenty of Sanitarium fans here. In my book, it's perfect as it is. It just needs to be on GOG :-)

Phelix: Moonstone

A modern remake of Moonstone could kick so much ass!
